That’s all the flesh taken off the fish. The bit you’d throw away. Deep fried and served on a plate. Partly wondering if we’re being served a portion of the Emperor’s New Clothes - but always keen to try something new - we went for it. Turns out it really is a delicacy and rather rare as you have to have absolutely the freshest bones. It was absolutely delicious - especially dipped in a bit of chilli ponzu.
